Bonbons / Marzipan

Ingredients

  • 2 cups almond flour
  • ¾ cup allulose or other non-GMO low-glycemic sweetener
  • 2 Tbsp water
  • 2 tsp almond extract
  • 1 tsp vanilla extract or flavoring
  • 4 oz 100% cocoa baking chocolate
  • 10 drops stevia, liquid

Instructions

  • Prepare a baking sheet that fits in your freezer or fridge with parchment paper or a silicone mat.
  • Use preferred heating method to melt chocolate. Keep warm.
  • In small bowl, combine almond flour and allulose.
  • Add almond extract, vanilla extract, and 1 tablespoon water.
  • Knead with hands or pastry blender until smooth, adding additional water as needed. Dough should be stiff, but not sticky.
  • Separate dough into 36 pieces and roll between your hands for preferred shape.
  • Add stevia to melted chocolate and mix.
  • Use fork to dip dough into chocolate, then place on lined baking sheet.
  • Place baking sheet in freezer or fridge until hardened.
  • Store in refrigerator.
