Bonbons / Marzipan

Ingredients
- 2 cups almond flour
- ¾ cup allulose or other non-GMO low-glycemic sweetener
- 2 Tbsp water
- 2 tsp almond extract
- 1 tsp vanilla extract or flavoring
- 4 oz 100% cocoa baking chocolate
- 10 drops stevia, liquid
Instructions
- Prepare a baking sheet that fits in your freezer or fridge with parchment paper or a silicone mat.
- Use preferred heating method to melt chocolate. Keep warm.
- In small bowl, combine almond flour and allulose.
- Add almond extract, vanilla extract, and 1 tablespoon water.
- Knead with hands or pastry blender until smooth, adding additional water as needed. Dough should be stiff, but not sticky.
- Separate dough into 36 pieces and roll between your hands for preferred shape.
- Add stevia to melted chocolate and mix.
- Use fork to dip dough into chocolate, then place on lined baking sheet.
- Place baking sheet in freezer or fridge until hardened.
- Store in refrigerator.
