Prepare a baking sheet that fits in your freezer or fridge with parchment paper or a silicone mat.
Use preferred heating method to melt chocolate. Keep warm.
In small bowl, combine almond flour and allulose.
Add almond extract, vanilla extract, and 1 tablespoon water.
Knead with hands or pastry blender until smooth, adding additional water as needed. Dough should be stiff, but not sticky.
Separate dough into 36 pieces and roll between your hands for preferred shape.
Add stevia to melted chocolate and mix.
Use fork to dip dough into chocolate, then place on lined baking sheet.
Place baking sheet in freezer or fridge until hardened.
Store in refrigerator.
